The book you are referring too is probably the English translation of the original Développement d'applications avec Objective CAML [editions-oreilly.fr], published in French by Éditions O'Reilly [editions-oreilly.fr], in April 2000. After all, CAML was developped in France.
As you can see [editions-oreilly.fr] on the cover [amazon.com], the animal is a horse from the race "Percheron" (in French). I heard that the CAML people were very disappointed that it couldn't be a "Chameau"...
