I've got much love for flan (Score:1)

I had a chance to work with Juan Cuevas (Ducase, Blue Hill, 81) while I was cooking at Blue Hill. One of the days that the restaurant was closed we had a party, and the most memorable part of it for me was his flan.
Before that party he let me take the spare ribs off of six pork bellies in preparation, which was also memorable. But the flan took the cake, if I'm allowed to mix metaphors so.
