hogar crea flan

There is a fairly well-respected charity that's fairly active in Bethlehem. It's called Hogar Crea. I'm sure they do lots of good stuff and help people. That's the impression I've gotten from various people. That's not what matters to me.

What matters to me is that sometimes they come to my door and in exchange for just a few dollars they give me a delicious flan. God bless you, Hogar Crea.

  • I had a chance to work with Juan Cuevas (Ducase, Blue Hill, 81) while I was cooking at Blue Hill. One of the days that the restaurant was closed we had a party, and the most memorable part of it for me was his flan.

    Before that party he let me take the spare ribs off of six pork bellies in preparation, which was also memorable. But the flan took the cake, if I'm allowed to mix metaphors so.
